Iced Hot Chocolate Molasses Cookie Ice Cream Recipe

  • 1 cup heavy whipping cream
  • 2½ cups whole milk
  • 3-4 tablespoons hot chocolate mix, to taste
  • ½ cup sugar
  • Molasses cookies
  1. Heat whipping cream, whole milk, and sugar in saucepan on stove nearly to simmering, but do not boil. Once sugar has dissolved, add hot chocolate mix to taste, making it lighter than actual hot chocolate, more of a flavoring, similar to vanilla. Whisk until combined. Take off heat and let cool down, while preparing ice cream maker. Once the mixture has cooled, pour into your ice cream maker. Once the mixture is turning into ice cream, and is starting to get frozen, but is not too frozen to turn yet, start crumbling molasses cookies into the ice cream. Add until ice cream maker is full, or as many as you wish. When the ice cream is done, put the excess in the freezer and enjoy your work!
